Velvet Provence Herbes de Provence Dressing | Avo & Olive

Our founder could not find this dressing anywhere. She wanted something herby, aromatic, layered — bright from white wine vinegar, deep from balsamic, with a floral note from the lavender in the herbes de Provence — and with nothing added that did not need to be there. So she built it herself.
The base is the Avo & Olive avocado and olive oil mayo foundation. Into that, a full tablespoon of herbes de Provence — thyme, rosemary, marjoram, oregano, lavender — for depth and aroma. White wine vinegar for brightness. Modena balsamic for warmth and colour. And then sumac: tart, fruity, slightly dry — the spice that sharpens everything around it without drawing attention to itself.
The mustard seeds are whole. You can see them through the bottle. They pop gently against the velvety texture of the dressing and remind you that this was made by someone who cared about the details.

Pairs Well With
Roasted chicken . endive and walnut salad . stone fruit and aged cheese . grilled asparagus . simple green salads. Exceptional as a chicken thigh marinade.
