Most mayonnaise is made with cheap oil, one-note acid, and a list of stabilizers to compensate for ingredients that should not be there. We built ours from scratch — and worked backwards from what we refused to include.

Three vinegars, each doing a different job. Rice vinegar for clean brightness. Modena balsamic for natural sweetness and warmth — the reason this mayo is ivory-gold rather than stark white. Apple cider vinegar with the mother for health complexity. Then 50/50 avocado and extra-virgin olive oil. Pasteurized eggs. Dijon mustard as the natural emulsifier — no polysorbates, no EDTA, no gums.

This is the foundation of everything we make. And it is worth buying on its own.
