Smooth, rich garlic. Dangerously easy to use too much!
Raw garlic mayo is easy to make. Sharp, one-dimensional, and just a bit much. This is the opposite. Garlic powder integrates into the base rather than dominating it. An extra drizzle of olive oil gives this a noticeably silkier texture. Nutritional yeast restores the savoury completeness that salt would normally provide.
Closer in spirit to a great aioli than to standard garlic mayo. Delicate enough to use generously, confident enough to still be the most interesting thing on the plate.
